Cauliflower Bisque

This bisque takes an under appreciated vegetable and transforms it into a delicious bisque. You can use any color cauliflower but the orange cauliflower is healthier and brings out more of the Saffron orange color.

Serve with crumbled bacon, sour cream or even croutons.

  • 2 Cups chicken broth
  • 2 Cups water
  • 1/8 Tsp saffron, crumbled
  • 3 Tbs butter
  • 1/2 Chopped yellow onion
  • 1 Clove garlic, chopped
  • 1 Large Orange cauliflower, chopped
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 3/4 Cup whole milk


    1. Combine chicken broth, water and bring to simmer.
    2. Add saffron to pan, remove from heat, steep for 20 minutes.
    3. In pot heat butter, add onions, garlic, cauliflower, salt and pepper, stir to coat.
    4. Add saffron broth, simmer for 20 minutes.
    5. Remove from heat. Add milk and blend with an immersion blender until smooth and creamy.
