Chili Con Carne

Chili can be an entire meal, especially with crackers or bread. You can also serve it up as a side dish for your steaks or burgers.


2 Tbs extra virgin olive oil
1 large onion, chopped
1/2 chile pepper, chopped
3 cloves garlic, chopped
1 Lb ground beef
2 (14.5 oz.) cans whole peeled tomatoes with liquid, chopped
2 Tbs Worcestershire sauce
1 Tbs salt
1 Tbs freshly ground black pepper
2 1/4 Tsp ground cumin
2 Tsp chili powder
1 Tbs paprika
1 Tbs dried oregano
1 Cinnamon sticks
1 Tsp sugar
3 whole cloves, ground
2 (15.25 oz.) cans red kidney beans, rinsed and drained

  1. In a medium sized stock pot, heat the oil over medium heat. Saute onion, chile pepper and garlic until soft. 
  2. Add ground beef: cook and stir until meat is browned.
  3. Pour in tomatoes with liquid, Worcestershire sauce, salt, pepper, cumin, chili powder, paprika, oregano, cinnamon sticks, sugar and cloves. Cover and simmer for 45 minutes.
  4. Stir in kidney beans and cook another 15 minutes. Remove cinnamon sticks before serving.

When serving add small bowls of cilantro, cheese and chopped onions for people to customize their bowl.
