Daikon Soup


Ingredients

  • 2 Tbs sesame oil
  • 2-3 garlic cloves
  • 1" ginger, minced
  • 1/2 small onion, cut into eighths
  • 1 carrot, cut into bite-sized chucks
  • 3" piece of daikon, peeled and cut into chunks
  • 2 Tbs mirin
  • 2 Tbs soy sauce
  • 1 can chicken or veggie broth
  • 1 package tofu, cubed (silken or firm)
  • Bag of mixed greens

Directions

  1. Heat sesame oil in a wok. Sauté garlic, ginger, onion and red pepper in a wok. Add the Daikon. 
  2. Let veggies soften and then add mirin and soy sauce.
  3. Stir and add broth and tofu. 
  4. Let simmer for a few minutes. Toss in the bok choy when the daikon begins to soften. 
  5. Cook until bok choy is soft. Adjust seasongs as needed.
