A quick way to grill that's tasty and healthy. IngredientsJasmin Rice Kabobs- 1 Lb Ground pork
- 1/2 Tbs Asian chili-bean sauce
- 2 Scallions, finely chopped
- 1/4 Cup Chopped fresh cilantro
- 1/2 Tsp Grated lemon zest
- 2 Pinches Sea salt
- Shish kabob skewers (can also use lemongrass)
Peanut Sauce- 1/8 Cup Creamy peanut butter
- 1 Tsp fish sauce
- 2 Limes
- 3 Tsp brown sugar
- Pinch Sea salt
Cucumber Salad- 1/4 English cucumber, sliced into thin rounds
- 1/4 Red onion, sliced thin
- 1/2 Lime
- 1 Tsp Fish sauce
- 2 Tsp Brown sugar
- Pinch Sea salt
- Black Pepper
Instructions
- Soak bamboo skewers in water for 30 minutes.
- Prepare Jasmin rice in rice cooker.
- Place turkey, chili-bean sauce, scallions, cilantro, lemon zest and pinch of salt in medium bowl and mix until combined.
- Form mixture into sausage shapes over the .skewers.
- Combine peanut butter, fish sauce, juice of two limes and brown sugar together in second bowl and whisk vigorously until smooth.
- Combine cucumber, red onion, lime juice, fish sauce and brown sugar together in a bowl and season with salt and pepper to taste.
- Grill kabobs over hot fire until lightly charred and internal temperature is 145 degrees.
- Fill bowls with a scoop of rice. Add two pork kabobs on top and spoon cucumber salad over top. Peanut sauce can be served in a small bowl or added on top of the bowl. Garnish with cilantro.
