Royal Icing


  • 3 Tbs meringue powder
  • 1/4 Tsp lemon juice (may substitute 1/2 tsp cream of tartar)
  • 1/3 Cup water
  • 1 Lb powdered sugar


  1. Put lemon juice in a measuring cup and add water to 1/3 cup.
  2. Wisk together with the meringue powder and let stand for 15 minutes.
  3. Add powdered sugar and beat at medium speed for 7 minutes.
  4. Store in an airtight container preferably glass or metal. Do not mix in a plastic bowl.
  5. May also be stored in a new zip lock bag with all of the air removed. Does not need refrigeration.
