Pancakes 1

Recipe from Cook's Illustrated.

No need for pancake mix, this is too easy to not make them from scratch. Customize them with just about any fruit including bananas, blueberries and strawberries. Add a little crunch with walnuts or chocolate drops. Go savory with corn, bacon, chilies or cheese. 

The trick with all additions is not to mix them into the batter. Immediately after pouring your pancake batter scatter your extras onto the top. When you flip the pancake they'll get baked right in.

As far as syrup goes use only grade B maple syrup. Everything A may sound good but in the case of syrup B is best. To make grade A syrup they've strained out all the good flavor and deep amber color.

  • 2 Cups Milk (should this be 1 Cup?)
  • 1 Tbs Lemon juice
  • 2 Cups (10 oz.) All-purpose flour
  • 3 Tbs Sugar
  • 2 Tsp Baking powder
  • 1/2 Tsp Tsp Baking soda
  • 1/2 Tsp Salt
  • 1 Tsp Vanilla Extract
  • 2 Large egg
  • 3 Tbs Butter
  • 2 Tbs Vegetable oil
