So incredibly simple to make and both light and rich at the same time. The pork belly gives it a little extra oomph. TimePrep time: 15 min Cook time: 15 min Total time: 30 min ServingsYield: 4 servings Ingredients- 2 Cloves garlic, unpeeled
- 1/2 Cup corn
- 12 Large shrimp, peeled
- 1/4 Cup Bacon or Roasted Pork Belly
- 2 Tbs olive oil
- 1 1/2 Cups heavy cream
- 1/4 Cup finely chopped parsley
- 1/2 Cup grated Parmesan
- 8 Oz fresh pasta (linguine, spaghetti, etc), cooked and drained
- Sea Salt and white pepper
Instructions- Peel shrimp and sauté just until no longer pink. Remove and set aside.
- Peel the garlic and finely chop.
- Heat oil in a large skillet over medium heat. Add garlic and pork belly and cook for 1 minute.
- Add corn and cook for additional minute.
- Pour in heavy cream and bring to a simmer. Cook until cream begins to thicken.
- Stir in parsley, Parmesan cheese and shrimp. Season with salt and pepper.
- Add pasta to skillet and toss to coat. Garnish with parsley and Parmesan.
