Canadian Bacon Spinach Quiche

Quiche is the answer to "what am I going to do with all of these small things leftover in my fridge? The basics are a pie crust, eggs, milk and cheese. Just about anything else can go in to the pie. This recipe uses a very healthy combination of fresh spinach and canadian bacon.

Cook time: 45 min
Total time: 1 hr

Yield: 1 9" pie (8 servings)
Serving size: 1 medium slice


  • 6 Large eggs
  • 1 1/2 Cups half and half
  • Pinch of Salt and pepper
  • 2 Cups chopped fresh baby spinach, packed
  • 1 Lb bacon
  • 1 1/2 Cups shredded cheese (any cheese is ok. Go crazy and put three different cheeses in there!)
  • 1 (9-inch) Refrigerated or Mom's pie crust


  1. Preheat the oven to 375 degrees F.
  2. Combine the eggs, half and half, salt, and pepper in a food processor or blender. Layer the spinach, Canadian bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top.
  3. Bake for 35 to 45 minutes until the egg mixture is set.

Note: This is a great recipe to make in advance. For breakfast just cut out a slice and microwave for 50 seconds on high.
