Pork Stir-fried with Garlic and Noodles

A simple and quick recipe for pork and noodles. It's very saucy so make sure there's at least four people because this dish can't be saved for leftovers.

  • 1 Lime
  • 1 Tsp Fresh garlic
  • 1 Tbs Brown sugar
  • 2 Red chilies
  • 2 Tbs Fish sauce
  • 1 Tbs Rice vinegar
  • 1 lb Pork
  • 1 Red bell pepper
  • 4 Oz Green beans
  • 7 Oz Rice noodles
  • 2 Tbs Cilantro leaves
  • 1 Tbs vegetable oil


  1. Cook noodles according to the package instructions. Make sure they're just past al dente so they don't get soggy in the dish.
  2. Juice the lime. Mince the garlic. Seed the chilies and slice finely. Seed the bell pepper and dice. Trim the ends of the green beans and chop into pieces the same size as the bell pepper. Chop cilantro finely.
  3. Cut the pork into 1/2" pieces.
  4. Mix together lime juice, garlic, brown sugar, red chilies, fish sauce and rice vinegar, stirring until the brown sugar dissolves.
  5. Heat half the oil in a wok and stir-fry the pork in two or three batches over a high heat for three to four minutes or until lightly browned. Remove from the work and set aside.
  6. Add the rest of the oil to the wok and stir-fry the red bell pepper and green beans over a medium heat for three minutes.
  7. Return the pork to the wok, add the noodles and garlic fish sauce mixture and toss over the heat for two to three minutes; until piping hot.
  8. Serve with cilantro sprinkled over top.
