Ingredients- 1 Serving pizza dough from Trader Joes
- 2 Tbs extra virgin olive oil
- 1/2 lb chicken
- 2/3 Cup barbecue sauce
- 1 Cup shredded mozzarella
- 1/2 Medium red onion, thinly sliced
- 3 Tbs chopped fresh cilantro leaves
- Flour, for dusting surface
- Cornmeal for pie pan
Directions- Preheat oven to 400 degrees F.
- Remove dough from bag and let sit on a floured surface for 20 minutes.
- Cut chicken into cubes.
- Heat oil in a large skillet over medium-high heat. Add chicken and saute until golden brown, about 12 minutes.
- Stir in enough bbq sauce to fully coat chicken. Add any spices you want such as chili powder and paprika to add extra heat.
- On a floured surface, roll out dough and place on a pizza pan dusted with cornmeal. Shape to fill the sheet pan, about a 15 by 10-inch rectangle.
- Spread remaining barbecue sauce evenly over pizza dough.
- Sprinkle cheese, onions, and chicken over top. Cover again with additional cheese.
- Bake for 20 minutes or until cheese bubbles.
- Sprinkle with chopped cilantro and serve.
