BBQ Chicken Pizza


  • 1 Serving pizza dough from Trader Joes
  • 2 Tbs extra virgin olive oil
  • 1/2 lb chicken
  • 2/3 Cup barbecue sauce
  • 1 Cup shredded mozzarella
  • 1/2 Medium red onion, thinly sliced
  • 3 Tbs chopped fresh cilantro leaves
  • Flour, for dusting surface
  • Cornmeal for pie pan


  1. Preheat oven to 400 degrees F.
  2. Remove dough from bag and let sit on a floured surface for 20 minutes.
  3. Cut chicken into cubes.
  4. Heat oil in a large skillet over medium-high heat. Add chicken and saute until golden brown, about 12 minutes. 
  5. Stir in enough bbq sauce to fully coat chicken. Add any spices you want such as chili powder and paprika to add extra heat.
  6. On a floured surface, roll out dough and place on a pizza pan dusted with cornmeal. Shape to fill the sheet pan, about a 15 by 10-inch rectangle.
  7. Spread remaining barbecue sauce evenly over pizza dough.
  8. Sprinkle cheese, onions, and chicken over top. Cover again with additional cheese.
  9. Bake for 20 minutes or until cheese bubbles. 
  10. Sprinkle with chopped cilantro and serve.
