Chicken and 40 Cloves

What makes this recipes awesome, besides the 40 cloves of garlic, is it's actually two dishes in one. After serving your chicken scoop out the garlic and serve in a bowl for spreading on your bread.


  • 1 whole chicken (broiler/fryer) cut into 8 pieces
  • 1/2 cup plus 2 Tbs extra virgin olive oil
  • 10 sprigs fresh thyme
  • 40 peeled cloves garlic
  • Salt and pepper
  • Loaf sourdough bread


  1. Preheat oven to 350 degrees F.
  2. Season chicken with salt and pepper. 
  3. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. 
  4. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours. Turn chicken every 30 minutes. Remove lid for the last 20 minutes.
  5. Cover loaf of sourdough bread and add to the oven for the last 20 minutes.
  6. Remove bread and chicken from the oven. Let chicken rest for 5 to 10 minutes.
  7. Spoon garlic and some of the oil mixture into a bowl. Be careful to remove floating bits of chicken.
