Grilled Adobo Chicken

Adobo (Spanish: marinade, sauce, or seasoning) is the immersion of raw food in a stock (or sauce) composed variously of paprika, oregano, salt, garlic, and vinegar to preserve and enhance its flavor. Wikipedia

  • 1 Sprig fresh basil
  • 1 Tbsp red pepper flakes
  • 1 Tbs spicy Spanish paprika
  • 3 Tbs sweet Spanish paprika
  • 1 Tbs dried thyme

Add olive oil a bit at a time, continuing to coat chicken with your hands. Squeeze lemon juice from 1/2 lemon, or a few tablespoons vinegar into bowl and mix.
  2. Allow to marinate for 20 minutes to 2 hours.
  3. Grill chicken, ten minutes for each side.
