Simple Tomato Sauce


  • 1/4 Cup olive oil
  • 1 Large yellow onion, sliced very thinly
  • 4 Cloves garlic, sliced very thinly
  • 1 Tsp dried chile flakes
  • 1 Cup dry red table wine
  • 1 Large (28 oz) can whole Italian tomatoes, with juice
  • 2 Tsp kosher salt
  • Freshly ground black pepper


  1. Heat a sauté pan over medium-high heat. Add the oil and the onion and cook for 6 to 8 minutes, stirring occasionally, until translucent.
  2. Add the garlic and chile flakes. Stir occasionally, and cook for another 2 minutes.
  3. Pour in the wine.
  4. While it's bubbling, add the tomatoes by hand 1 at a time, squeezing each whole tomato over the pan to break it up, then dropping the pieces into the pan. (Note that you might want an apron for this job). Add any remaining juices from the can.
  5. Once all the tomatoes have been added, stir the sauce and let it bubble, uncovered, for about 15 minutes, or until thickened.
  6. Season to taste with salt and pepper.
