Spicy Garlic Shrimp

A classic Spanish tapas that makes a fabulous meal with sour dough bread and salad.

Yield: 2 servings


  • 1 Lb Jumbo shrimp, peeled, deveined, and tails removed
  • Salt and pepper
  • 1/2 Cup extra virgin olive oil
  • 8 Garlic cloves, sliced thin
  • 1 Bay leaf
  • 1/2 Tsp red pepper flakes
  • 1 Tbs minced fresh parsley
  • 2 Tsp sherry vinegar
Sliced sourdough bread


  1. Pat shrimp dry with paper towels and season with salt and pepper. Heat 10-inch cast-iron skillet over medium heat for five minutes. Add one tablespoon oil and heat until just smoking. Add half of shrimp in even layer and cook, without moving them, until browned on one side, about two minutes: transfer to bowl. Repeat with one tablespoon oil and remaining shrimp; transfer to bowl.
  2. Reduce heat to low and add remaining six tablespoons oil., garlic, bay leaf, and pepper flakes to now-empty skillet. Cook, stirring occasionally, until garlic is tender and beginning to brown, four to seven minutes. 
  3. Incase heat to high and add shrimp and any accumulated juices. Cook, stirring constantly, until shrimp are opaque throughout, about one minute.
  4. Discard bay leaf. Off heat, stir in parsley and vinegar; season with salt and pepper to test. Serve with sliced sourdough bread.
