Baked Roots

This is a great warm side dish which can use any root vegetables you like. 

Servings 4


  • 1 Sweet Potato
  • 1 Red onion
  • 1 Sprig of Thyme
  • 1 Sprig of Rosemary
  • 2 Tbs Olive oil
  • Pinch of sea salt
  • Pinch of pepper


  1. Mince herbs and dice vegetables into 1/2" pieces.
  2. Toss vegetables and herbs with oil. 
  3. Cover a cooking pan with parchment paper and lay out vegetables and herbs evenly over the paper (lay evenly so that the vegetables brown and not steam). Sprinkle with salt and pepper to taste.
  4. Bake in 375° oven for 60 minutes until tender and beginning to brown. 
  5. Serve immediately.
