Boiled Soybeans with Konbu


  • 1 Cup soybeans
  • 1 4" square konbu (kelp)
  • 5 Cup water
  • 1/2 Cup sugar
  • 7 Tbs sake
  • 3 1/2 Tbs soy sauce


  1. Clean soybeans and soak them in water several hours or overnight.
  2. In a 3-quart saucepan, pour 5 cups water and softened soybeans. Bring to a boil. Turn heat to medium and cover and simmer until beans are almost tender, about one hour. Skim scum if necessary.
  3. Wipe off white powder from konbu. Cut into 1/4" square pieces. Add to beans.
  4. Add sugar and sake; simmer over low heat until most of liquid is gone.
  5. Add soy sauce. Remove from heat, cover and let stand 5 minutes.
