Buta Kimchee

One of my favorite dishes from Japan. It has a very fresh Korean taste to it. Goes well with beer!


  • 1 Cup Kimchee (Use the good stuff, not your grocery store pickled cabbage.)
  • 1/2 lb Bacon (best to use fresh sliced thick slices.)
  • 1 Tbs Sake
  • 1 Tbs Soy Sauce
  • 1 Tbs Sesame Oil


  1. Combine the sake, soy sauce and sesame oil in a small bowl.
  2. Slice bacon into 3/8" strips. 
  3. In a wok fry bacon until cooked but not yet crispy. 
  4. Add the kimchi and stir-fry over high heat for 2 minutes. 
  5. Pour the sauce and mix in for another minute or two.
  6. Serve hot over rice or as a side dish.
