Watermelon Salad

Savory? Fruity? I don't know how to describe it but this was a huge hit at our friend Priya's house warming party.


  • 1 Watermelon, cut into 1/2 inch cubes
  • 2 English cucumbers, cut into 1/2 inch cubes
  • 1 Medium red onion, thinly sliced, soaked in cold water 10 minutes and drained (optional)
  • 8-16 oz. Feta cheese, cut into cubes 
  • Leaves from 1 bunch mint, divided in half
  • 1/2 Bunch cilantro 
  • Juice of 3-4 limes
  • 2 Tbs olive oil
  • Salt to taste
  • 1/4 - 1/2 Tsp Cayenne pepper


  1. Combine watermelon, cucumber, and onion in a large bowl.
  2. In a blender, blend half of the mint leaves, cilantro, lime juice, olive oil, salt and cayenne.
  3. Pour some of the dressing over the salad and marinate half an hour. 
  4. Add feta and remaining mint leaves and toss to combine. 
  5. Taste for balance - add more dressing, lime juice, cayenne or salt to taste.
