Candied Walnuts

Of course I eat candied walnuts for the brain food, but mom's candied walnuts are great in spinach salad as well.


  • 1/4 cup water
  • 1 cup sugar
  • 2-3 cups walnuts (Costco sells)
  • 1/2 tsp. vanilla


  1. Boil water and sugar to 240 degrees Celsius on the candy thermometer. Remove from heat. Immediately stir in the vanilla and walnuts.
  2. Spread out on a cookie sheet, ideally on a Silpat. Break up the clumps to store. They keep well at room temperature.
