Of course I eat candied walnuts for the brain food, but mom's candied walnuts are great in spinach salad as well. Ingredients- 1/4 cup water
- 1 cup sugar
- 2-3 cups walnuts (Costco sells)
- 1/2 tsp. vanilla
Instructions- Boil water and sugar to 240 degrees Celsius on the candy thermometer. Remove from heat. Immediately stir in the vanilla and walnuts.
- Spread out on a cookie sheet, ideally on a Silpat. Break up the clumps to store. They keep well at room temperature.
